Toasted Tomato Endive Bowls
INGREDIENTS:
3 strips bacon, cooked & chopped
3 Roma tomatoes, cored and chopped
3 tbsp toasted hemp hearts (To toast: Bake at 350°F for 10 minutes)
Small splash of red wine vinegar
1 tbsp mayo - avocado oil mayo is best
Sea salt & pepper
8-12 endive leaves
4 fresh basil leaves, sliced
PROCEDURE:
Toss the bacon, tomatoes, hemp hearts, red wine vinegar, and mayo. Season with sea salt & pepper to taste.
Serve the tomato mixture in endive leaves topped with fresh basil.
NOTES:
MAKE IT VEGETARIAN: Replace bacon with tempeh bacon.
MAKE IT AHEAD: Make the tomato mixture up to 5 days in advance.
MAKE IT MORE FILLING: Add 1/4 cup of cooked, chopped chicken breast or avocado to the tomato mix
