Savoury Greek Breakfast Bowl
INGREDIENTS:
(per 2 bowls)
1 1/2 cups cottage cheese (0-2%)
1/2 cup feta, crumbled
1/2 cup chopped spinach
1/2 cup grated cucumber
1 tbsp fresh dill fronds
Juice & zest of half a lemon
1 tbsp toasted pine nuts or chopped almonds
Drizzle of extra-virgin olive oil
Salt to taste
PROCEDURE:
Mix all ingredients together except for the zest, nuts and olive oil. Divide between 2 bowls or containers. Top each with zest, nuts, olive oil and sea salt.
NOTES:
MAKE IT AHEAD: Make the bowls up to 5 days in advance.
MAKE IT MORE FILLING: Add 2 strips of bacon or turkey bacon, cooked and chopped, to the bowl.
ADD SOME CARBS: Stir 1/4 cup cooked and cooled brown rice to the mixture before dividing.
